Overview

The sunflower (Helianthus annuus) is an annual oilseed and ornamental species in the family Asteraceae, cultivated worldwide for edible oil, confectionery and birdseed kernels, and as a flowering crop. Its large capitulum bears seeds rich in lipids, with an oil profile dominated by unsaturated fatty acids and accompanied by tocopherols, phenolic compounds, and other antioxidants. Agronomic performance depends on cultivar, sowing date, soil and irrigation conditions, fertilization, and pest pressure, while oil quality is further shaped by extraction and refining processes.
